Shelling allows for better absorption. Red lentils tend to overcook, so they're best added to soups, stews, and savory snacks. PREPARATION Cook the previously rinsed lentils in a ratio of 1: 2 (1 portion of lentils to 2 portions of water) for about 25 minutes. Season with salt at the end of the cooking time.
